Oatmeal coconut chocolate chip cookies

Ingredients:

  • 1 1/2 cups flour
  • 1 tsp salt
  • 1 cup oil
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 cups rolled oats
  • 1/2-3/4 cup coconut (depending on how much you prefer)

Directions:

  1. Cream oil and sugars with mixer.
  2. Add eggs and vanilla.
  3. Mix dry ingredients and add to sugar mixture.
  4. Add chocolate chips and coconut by hand.
  5. Use small cookie scoop drop onto ungreased cookie sheets.
  6. Bake at 350 for 8-10 minutes.
