Ingredients:

  • 3/4 cup butter
  • 1 3/4 cups all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/4 tsp baking soda
  • 2 cups rolled oats
  • 1/2 cup raisins (optional)
  • 1/2 cup nuts (optional)

Directions:

  1. In a large mixing bowl beat the butter with a electric mixer on medium to high speed about 30 seconds or until softened.
  2. Add about half of the flour to the butter. then add the brown sugar, sugar, egg, baking powder, vanilla, cinnamon, baking soda, and cloves. Beat till thoroughly combined, scraping sides of bowl occasionally. Then beat or stir in the remaining flour. Stir in rolled oats, finely shredded carrots and if desired, raisins and nuts.
  3. Drop dough by rounded teaspoon 2 inches apart onto ungreased cookie sheet. Bake at 375 degree oven for 10-12 minutes or till edges are lightly browned. Remove cookies and cool on wire racks.
