Nova Scotia Oatmeal Bread

Ingredients:

  • 2 tbsp butter
  • 1/2 cup molasses
  • 2 tsp salt
  • 1 (1 tbsp) package active dry yeast
  • 1/8 tsp ground ginger
  • 1/2 cup warm water
  • 1/4 cup wheat germ (optional)
  • 2 -3 cups flour

Directions:

  1. Pour boiling water over the oats.
  2. Add butter or marg.
  3. Stir and allow to stand until cool.
  4. Add molasses and salt.
  5. Dissolve yeast and ginger in 1/2 cup warm water. Let stand 10 minutes.
  6. Add to oatmeal mixture, mixing well.
  7. Add whole wheat flour and wheat germ slowly, mixing well after each addition.
  8. Add enough white flour to make a stiff dough.
  9. Turn out onto a floured board and kneat until smooth and satiny.
  10. Place in a greased bowl.
  11. Cover and let stand til double in bulk (about one hour).
  12. Shape into 2 loaves and place in greased bread pans.
  13. Cover and let rise til double (about an hour).
  14. Bake 350F 50-60 minute until well browned.
  15. Unmold and cool on a rack.
