Not So Sweet Sweet Potatoe Casserole

Ingredients:

  • 6 medium sweet potatoes
  • 1/2 cup of sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/3 cup milk
  • 1/2 cup butter
  • topping
  • 2/3 cup packed brown sugar
  • 4 tbsp flour
  • 4 tbsp butter

Directions:

  1. Peel, cube and cook potatoes in boiling water until tender (45 to 60 minutes). The smaller they are the faster they cook. Mash the potatoes, then combine sugar, eggs, vanilla, milk and butter and beat with electric mixer until smooth. Spoon into lightly greased
  2. 12 x 8 x 2-inch baking dish. Combine ingredients for topping. Sprinkle over casserole and bake all at 350 for 30
  3. This can be made low fat and sugar free.
  4. Use low fat milk and butter and substitue sugar for splenda.
