Ingredients:

Directions:

  1. Grate carrots (place 2 T grated carrot aside for garnish).
  2. Chop basil roughly (for garnish).
  3. Fry sausages in oil until almost cooked (med heat).
  4. Slice sweet potato (without removing peels).
  5. Add sweet potatoes to sausages.
  6. Slice sausages when cooked through.
  7. Add soy sauce.
  8. Add cayenne pepper.
  9. Stir occasionally to prevent sticking or burning.
  10. Cook until potatoes are slightly browned.
  11. Stir in carrot and spinach.
  12. Remove from heat as soon as ingredients are mixed.
  13. Serve immediately.
  14. Garnish with a sprinkling of basil and grated carrot.
  15. Serve with a salad.
