Nellies Southern Sweet Potato Casserole

Ingredients:

  • 3 cups cooked mashed sweet potatoes ( if you want to cook them the old fashioned way, bake the sweet potatoes at 350 until they''re tender ' about 45 minutes for average sized potatoes; if you''re in a hurry, boil / steam them in about a half inch of water. i cook mine skins on, but it really doesn''tsp matter).
  • 2 eggs
  • 2/3 stick butter, softened (don''tsp substitute margarine here!)
  • topping
  • 1 cup pecans, coarsely chopped (tip : pulse on ''chop'' setting in your food processor.)

Directions:

  1. Preheat oven to 375.
  2. Mix well all ingredients for casserole, then pour into ungreased 9”x12” baking dish.
  3. Combine all ingredients for topping, then crumble / spread over casserole mixture.
  4. Bake for approximately 30 minutes.
  5. Yumm!
