Ingredients:

  • 1-inch cubes
  • 1 10- oz. can ro-tel tomatoes
  • green chilies , to taste
  • 2 cans water
  • 1 tbsp. cumin
  • 1 tbsp. paprika
  • 1 tsp. salt
  • 1 tbsp. dried onion
  • 1 tbsp. dried garlic
  • 1/3 cup chili powder

Directions:

  1. Sear cubed chuck roast in skillet.
  2. Add Ro-Tel tomatoes, green chilies and water.
  3. Stir in cumin, paprika, salt, dried onion, dried garlic and chili powder. Add two or three smidgens of red pepper to taste.
  4. Cover skillet and simmer for about 30–35 minutes.
  5. Mix about 1/4 cup of good masa (corn dough) with 1/4 cup of warm water into a pourable mixture and add to chili.
  6. Simmer an additional 15–20 minutes.
