Ingredients:

  • 1 can

Directions:

  1. Can Bush’s Black beans(rinse well)
  2. Can Corn—niblets or yellow and white corn works…you can use cooked corn on the cob, but I have found to canned corn works well.
  3. Chopped red pepper
  4. Chopped green pepper
  5. Chopped/diced 1/2 red onion
  6. Clove garlic crushed
  7. Tbs cilantro
  8. Tsp cumin
  9. 1/2 tsp chili pepper
  10. Few shakes of dried red pepper flakes
  11. 1/2 tsp salt
  12. 1/2 tsp black pepper
  13. 1/4 cup or less of light olive oil
  14. -4 medium sized tomatoes…vine ripe work well…or your garden ones are BEST! Chopped
  15. -4 Limes squeezed
  16. Combine all ingredients except tomatoes….add tomatoes right before serving...tomatoes can make the salsa too soupy.
  17. The spices are to your taste…I really don’t measure!
