Ingredients:

  • 723 g eggplant
  • 450 g squash
  • 182 g onions
  • 800 g tomatoes
  • 1/2 cup basil
  • 2 tblsp balsamic vinegar

Directions:

  1. Heat oil in large non-stick frypan
  2. Sautee onions, garlic, basil and thyme gently till onion glassy.
  3. Add eggplant and sautee till lightly coloured
  4. Add squash, peppers and fry 2-3 mins.
  5. Add tomatoes and olives and cook on low heat for half an hour or until all ingredients soft.
  6. If desired you can poach an egg in the last few minutes of cooking for a more substantial meal.
