Ingredients:

Directions:

  1. Melt the butter and add the mushrooms and spring onions
  2. Cook for about 5 minutes
  3. Add the lemon juice
  4. Add the risotto rice and stir - cook for 1 minute
  5. Add the stock
  6. Bring to simmer
  7. Pour into a ovenproof dish and cover
  8. Cook at 150C for 40 minutes
  9. Add the cheese, stirring it through
  10. Return to the oven for another 10 minutes
  11. Serve
