quick risotto
Ingredients:
2 large mushrooms, diced
75 g risotto rice
3 spring onions, chopped
300 ml stock, vegetable
1 oz unsalted butter
1 tsp lemon juice
1 oz cheddar cheese
Directions:
1. melt the butter and add the mushrooms and spring onions
2. cook for about 5 minutes
3. add the lemon juice
4. add the risotto rice and stir - cook for 1 minute
5. add the stock
6. bring to simmer
7. pour into a ovenproof dish and cover
8. cook at 150C for 40 minutes
9. add the cheese, stirring it through
10. return to the oven for another 10 minutes
11. serve
