  1. Coat a medium size pot with canola oil spray.
  2. Add chicken and cook it on medium heat for about six minutes (until brown), stirring to break it up. Next add mushrooms, chives, and soy sauce; cook for two more minutes.
  3. Spoon mixture onto lettuce leaves and roll up.
