Ingredients:

Directions:

  1. Preheat oven to 400 degrees.
  2. In large bowl combine all bran, oatmeal, flax, coconut extract, and milk. Set aside about 5 minutes until cereal softens.
  3. Mix dry ingredients: flour, sugar, baking powder, and salt.
  4. Add to the allbran mix: egg, beaten, the oil, and the banana (mashed well). Beat well.
  5. Add flour mixture to the liquid ingredients and stir until combined.
  6. Portion batter into 12 paper-lined muffin tins.
  7. Bake 20 minutes at 400 degrees.
