  1. Preheat oven to 350 degrees F. Grease muffin pan and line with paper liners. In large bowl, combine all the dry ingredients except the pecan pieces. In a large separate bowl combine all the wet ingredients. Blend well. Slowly combine the dry ingredients to the wet ingredients a little at a time, blending well between additions. When both have been mixed, add the pecan pieces and mix into the batter.
  2. Scoop batter into muffin cups. Bake 25-30 minutes or until a toothpick inserted in the muffin comes out clean. Let cool before serving.
  3. Nutritional info: 205 calories per muffin; 26 g carbohydrates, 8.2 g protein; 8.2 g fat
  4. Makes 18 medium size muffins.
