Mother B's Spinach Dip

Ingredients:

  • 2 (10 oz) packages frozen spinach
  • 3 cups mayonnaise
  • 1 (3 oz) jar bacon bits
  • 1 tbsp lemon juice
  • 1 dash garlic
  • 1 dash salt

Directions:

  1. Thaw spinach. Squeeze out as much water as you can.
  2. Mix ingredients starting with the mayo and spinach.
  3. It's best if you refrigerate the dip overnight and put in the bread bowl just before serving.
  4. Carve out center of pumpernickel bread. Put dip inside. Make cubes out of the chunk of bread you took from the middle.
  5. Arrange on a platter with cubed pumpernickel surrounding the bread bowl or you can purchase a small loaf of cocktail pumpernickel.
  6. You can also use 1/2 lb of well drained, crumbled bacon instead of the bacon bits.
