Mostly Moosewood Lentil-Bulgur Salad

Ingredients:

  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 tbsp mint
  • 2 tbsp dill
  • 1/4 cup parsley
  • 1/3 cup red onion

Directions:

  1. Cook lentils in 2 cups water for 25 minutes, allowing them to simmer without disturbing them.
  2. Drain lentils, then transfer to large bowl.
  3. While lentils are cooking, place bulgur in small bowl. Add one cup boiling water, cover with a plate, and let stand for 10 to 15 minutes.
  4. Add everything to the lentils except tomato chunks. Mix gently but thoroughly.
  5. Cover tightly and refrigerate.
  6. Just before serving, top with tomato chunks.
