Moms Potato Salad

Ingredients:

Directions:

  1. Boil potatoes until tender. I cook for about 45 min, just covered by water.
  2. Cool completely
  3. Peel if desired, or just cut into small cubes
  4. Place potatoes in large bowl
  5. Add a few splashes of red wine vinegar.
  6. Add 2 T. minced onion, more to taste if you are using a sweet onion, like Vidalia.
  7. Mix in equal amounts of miracle whip and mayo until desired consistencey, I use two heaping tablespoonsful of each.
  8. Sprinkle in some dried parsley and mix in the hard boiled eggs, diced.
  9. Best if refrigerated a few hours or overnight to allow the flavors to blend .
