Mom's Banana Bread

Ingredients:

  • 2 eggs
  • 2 1/2 cups whole wheat flour
  • 1 1/4 cups brown sugar
  • 2/3 cup plain yogurt
  • 1/3 cup canola oil
  • 1 tsp salt
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 350 degrees.
  2. Line two 8 loaf pans with enough foil to be able to wrap up the bread once it has been cooked.
  3. In large bowl beat eggs, then add other ingredients and mix until combined.
  4. Pour batter equally into 2 loaf pans.
  5. Bake 50 minutes or until a toothpick comes out clean.
  6. Allow to cool completely then wrap and save for later or slice and enjoy.
