Ingredients:

  • 1 lb salt pork
  • 1 medium size onion
  • 8 tbsp sugar
  • 2/3 cup molasses
  • 4 tsp salt
  • 1/2 tsp pepper

Directions:

  1. Soak beans overnight.
  2. Parboil Beans for ten minutes with the baking soda.
  3. Run cold water through the beans in a strainer.
  4. Peel onion but leave it whole.
  5. Dice rind of salt port in one half inch squares.
  6. Put half of the pork to the bottom of bean pot with the onion.
  7. Add beans,.
  8. Put the rest of the pork on top.
  9. Mix other molasses, mustard, salt and pepper with 1 cup hot water. Pour over beans.
  10. Put in 300F oven for six hours.
  11. Add water to pot as necessary, to keep the beans moist. Be careful not to flood the beans.
