  7. Reduce heat to a simmer until the syrup reduces to 75% and thickens into a syrup.
  8. PREPARE THE DISH:.
  9. Grill the steak to desired doneness.
  10. Drizzle Balsamic Glaze on steak.
  11. Sprinkle gorgozola cheese on top.
