Ingredients:

Directions:

  1. Cut 'woody' ends off white asparagus, peel, cut into bite sized pieces.
  2. Cut off bottom art of green asparagus, peeling only last third as they do not need to be peeled like the white one
  3. Cut into bite-sized pieces
  4. Take large skilled, melt butter with medium heat, adding white asparagus,
  5. Stirring all the time
  6. Add green asparagus
  7. Stir for about five minutes
  8. Clean spring onions,
  9. Cut into bite-sized pieces, add to pan
  10. Stir for another five minutes - or so...
  11. Season with pepper and salt
  12. Dust with flour
  13. Pour on vegetable broth
  14. Stirring continuously
  15. Then add cream
  16. Stir and let simmer for about 10 minutes
  17. Add the lemon juice
  18. Now, if you want to add the egg yolk, put yolk into small bowl, add - a tablesppon at a time, altogether about three - some of the sauce, stirring all the time.
  19. Now, pour SLOWLY egg yolk-sauce-mixture back into skillet. this way the yolk does not curdle.
  20. You do not NEED the egg - but it makes it look nicer and you can use less flour, the yolk thickens the sauce.
  21. Before serving, sprinkle with chopped parsley
