Missouri Blackberry Jam Cake

Ingredients:

  • 1 cup. butter
  • 2 cup. sugar
  • 1 tsp. baking soda
  • 1 cup. buttermilk
  • 3 cup. sifted flour
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. cloves
  • 1/2 tsp. allspice
  • 1 tsp. vanilla
  • 4 egg whites , beaten stiff
  • jam, melted (optional)

Directions:

  1. Cream butter and sugar together well. Dissolve soda in buttermilk and add egg yolk. Sift flour and dry ingredients and alternate soda mixture and flour mixture to cream mixture.
  2. When mixed well, add vanilla and jam. Fold in the beaten egg whites.
  3. Bake in a greased tube pan at 300 degrees for 15 minutes. Drizzle with melted jam if desired.
  4. Slice very thin as this is a very rich cake. Blueberry jam from our own wild sweet Missouri blackberries make this cake a family favorite.
  5. Serves 20.
