Minty Salad Dressing

Ingredients:

  • 1 cup sugar
  • 1 cup water
  • 1 cup mayonnaise

Directions:

  1. Rough chop the mint.
  2. Bring sugar and water to a boil. Reduce heat and simmer, uncovered, about 4 minutes.
  3. Remove from heat and add mint. Cover and steep at least 20 minutes.
  4. Strain and discard mint.
  5. Chill until needed.
  6. Whisk mayo into the mint syrup and blend well.
