Mint Chip Meringue Cookies

Ingredients:

  • 3/4 cup sugar
  • 1 pinch salt
  • 1/2 tsp peppermint extract
  • 3 drops green food coloring

Directions:

  1. Preheat oven to 250 degrees.
  2. Beat egg whites in a glass bowl until stiff.
  3. Gradually add sugar, salt, cream of tartar, peppermint extract and food color.
  4. Fold in chips.
  5. Drop on buttered cookie sheet.
  6. Turn oven off, and leave in two hours or overnight.
