Ingredients:

Directions:

  1. Place beans in large saucepan,fill with 5 c heavily salted water,bring to boil over med-high heat. Teduce heat to low and cook,covered,until beans are tender all the way through,about 2 hours. Reserve 4 c bean cooking liquid. Drain beans and reserve.If using canned beans,skip this step and substitute water for bean liquid.
  2. Heat butter and oil in large,heavy-bottomed pot over med. heat.Once butter foams,add onion and garlic and cook till onion is soft and translucent,about 5 mins.Season well with salt and pepper. Add potato,celery,carrot,and bayleaf and stir to coat. Cook until celery is just soft,about 4 mins. Add tomatoes with juices,season with salt and pepper,stir(scraping up browned bits from the bottom) and cook till juices are almost completely reduced,about 2 mins.
  3. Add half of green beans,half of zucchini,half of peas and broth,let simmer,stirring occasionally until zucchini begins to soften,about 10 mis. Stir in reserved beans and liquid,remaining green beans,zucchini and peas;past anf half of parsley and simmer till pasta is al dente,about 10-15
  4. Remove from heat,stir in remaining parsley,taste,adjust seasonings as needed
  5. To serve,place in bowls,garnish with a drizzle of olive oil,sprinkled grated cheese over top;and season with fresh ground black pepper.
