Ingredients:

Directions:

  1. Start by heating the vegetable oil in a large stock pot
  2. I season the tips with Lawry's, pepper and then coat with the flour.
  3. I cooked the tips and the chopped onion over very high heat and brown them thoroughly.
  4. I reduce the heat and add the garlic,Rotel,Beef Broth and the chili powder.
  5. I bring this to a boil and transfer this to a crock pot for the remainder of the cooking time.I serve this on tortillas for breakfast with Picante Sauce
  6. If you have any left you may add diced potatoes to the crock pot and serve the Mexican stew with mexican rice and beans for a great dinner.In our home we don't have many left overs but if you do come up with something creative ! Two meals out of one would be great.
