Microwave Peanut Brittle

Ingredients:

  • 1 cup sugar
  • 1 dash salt
  • 1 -1 1/2 cup shelled raw peanuts
  • 1 tbsp margarine or 1 tbsp butter
  • 1 1/2 tsp baking soda

Directions:

  1. HEAVILY grease a baking sheet.
  2. Combine sugar, corn syrup& salt in a 3 quart casserole dish.
  3. Stir in peanuts.
  4. Microwave at HIGH until light brown (8 – 10 minutes), stirring once or twice.
  5. Stir in remaining ingredients until light& foaming& spread as thinly as possible on baking sheet for brittle candy.
  6. Cool& break into pieces.
