Mexican Ground Beef Stew

Ingredients:

  • 3 (14 oz) cans crushed tomatoes
  • 3 (10 oz) cans rotel tomatoes
  • 2 (8 3/4 oz) cans corn
  • 1 (16 oz) package corn tortillas
  • 1 (16 oz) package shredded cheddar cheese

Directions:

  1. Stew: cook beef.
  2. Add all ingredients to large pot.
  3. Simmer on low for 2 hours.
  4. Serve in individual bowls with cheese and tortilla strips on top.
  5. Tortilla strips: slice tortillas in thin strips and fry in oil.
