Metric Jester's Creamy Vegetable and Potato Soup for One

Ingredients:

  • 1/2 tbsp olive oil
  • 1 medium carrot
  • 1 medium onion
  • 1 garlic clove
  • 1/2 tsp fennel seed
  • 1/4 tsp nutmeg
  • 2 cups chicken stock or 2 cups vegetable stock or 2 cups water
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions:

  1. Liquid could be chicken stock, vegetable stock or water.
  2. Chop everything.
  3. Scramble fry first 7 ingredients until very soft.
  4. Add salt and pepper (as desired).
  5. Add baked potato to pot
  6. If potato is cold, you will need to warm it up here.
  7. Add liquid 1/4 cup at a time stirring continuously.
  8. Once all liquid is added, blend with a blender or use a hand blender in the pot.
