Mels California Salad Ambrosia

Ingredients:

  • 2 large cans of fruit cocktail
  • 2 cans of mandarin oranges
  • 2 cans (or 1 large can) of crushed pineapple
  • 1 package of miniature marshmallows
  • 2 12 oz. containers of whipped topping

Directions:

  1. Drain all fruit very well, manually squeezing the pineapple to get as much juice out as possible. Put all fruit in a very large bowl. Mix in coconut to taste. Add marshmallows to taste.
  2. Stir in one of the containers of whipped topping and refrigerate overnight.
  3. Check the composition of the mixture before serving. If it is too runny, add more whipped topping before serving.
  4. Serves: a lot (at least 12)
  5. Mel's notes: I always add extra topping before serving. I also like to add a jar of drained maraschino cherries.
  6. I have also added a touch of rum on occasion. But it does tend to make the salad too wet in my opinion.
  7. The 360 minutes cooktime refers to chilling overnight.
