Directions:

  1. Sort through and wash lentils.
  2. Put first five ingredients in a sauce pan and cover with enough water to cover an inch.
  3. Cook until lentils are tender, about 30 minutes.
  4. Chill
  5. Add fresh basil strips and walnuts.
  6. Serve over spinach leaves
