  1. Carroll Shelby's chili kit is easy to use and leave out the extra salt and fat. There are 4 separate packets that include a chili seasoning packet, masa/flour packet, salt and cayene pepper packet. Do not use the salt or masa flour. Neither is really necessary, use a salt substitute, and you can control the consistency of the chili but reducing the water or juices from the tomatoes and beans.
  2. Brown the turkey in a large pot sprayed with cooking spray. Once the turkey is browned, add the can of tomato sauce and two cans of water to the turkey. Add the chili season packet and mix well. Use Nu-salt or other salt substitute and salt to taste. Simmer this mixture for 15 minutes.
  3. After simmering, add pinto beans, drain any excess water if you want thicker chili. Add the stewed tomatoes including the juice. Let simmer for another 15 - 20 minutes or place in slow cooker for awhile if you have the time. If you enjoy really hot chili, add the cayene pepper packet and some jalapeno peppers for an extra kick.
  4. Each serving is about 1/2 cup
