Matty's Healthy Blueberry Muffins

Ingredients:

  • 2 eggs
  • 1 cup sugar
  • 1 cup milk
  • 1 cup flour
  • 1/2 tsp salt
  • 2 cups blueberries

Directions:

  1. Preheat oven to 350.
  2. Grease muffin tins.
  3. Mix in a large bowl; eggs, butter, sugar, almond extract, then add milk and stir.
  4. Sift and mix in another bowl; wheat flour, flour, baking powder, salt.
  5. Mix the dry sifted ingredients into the large bowl with egg mixture until just combined, do not beat or whip.
  6. Gently fold in blueberries and sunflower seeds.
  7. Fill greased tins 3/4 full.
  8. Bake 350 for 20-25 minutes.
