Directions:

  1. Preheat oven to 350 degrees.
  2. Microwave Sweet Potatoes until almost done. In my microwave that takes about 8 minutes, it will depend on the size of the Sweet Potatoes,too. They will be slightly tender to the touch and will continue to cook for awhile. Let cool.
  3. Spray a 9 X 12 inch casserole dish with Butter Spray. Peel the Sweet Potatoes and cut into chunks. Add the Pineapple to the Sweet Potatoes and place in the prepared casserole.
  4. Pour Orange Juice over all, scatter the toasted,chopped pecans and dot with Margarine.
  5. Place casserole covered in microwave on high for 6 minutes and Sweet Potatoes are done.
  6. If you feel you really need them, scatter small marshmallows over all and then let them brown in Preheated oven before serving.
