Marinated Tofu Stir-Fry

Ingredients:

  • 1/3 cup soy sauce
  • 0.5 (8 oz) package firm tofu
  • 1 (8 oz) can baby corn
  • 1 (8 oz) can water chestnuts
  • 1 (16 oz) package frozen stir fry vegetables
  • 1 cup brown rice

Directions:

  1. Drain tofu on paper towels.
  2. Cube tofu into 1-inch chunks.
  3. Combine soy, o.j., and 5 spice powder.
  4. Add tofu and marinate in fridge overnight.
  5. Combine frozen veggies, corn, and water chestnuts in pan coated with cooking spray.
  6. Cook over medium heat for about 10 minutes. add tofu and marinade and cook until veggies are done- about another 7-10 minutes.
  7. Serve over warm rice.
