Marinated Broccoli Amp Tomato Salad

Ingredients:

Directions:

  1. Trim flowerettes from broccoli.(you should have about 1 quart)
  2. Drop broccoli flowerettes into boiling salted water for 1 min.or
  3. Just until they turn bright green, drain
  4. Trim mushrooms stems to 1/2
  5. Combine broccoli, mushrooms, olives & cherry tomatoes in bowl
  6. Measure oil, vinegar, lemon juice,parsley, onion, garlic, salt & pepper
  7. Into a bowl. Whisk until blended
  8. Pour dressing over vegetable mixture
  9. Turn gently to coat vegetables, cover & refrigerate 3 hrs. or more.
  10. Until ready to serve
