Ingredients:

  • 8 medium carrots
  • 1 orange , rind of, grated
  • 3 tbsp maple syrup
  • 1 pinch mace or 1 pinch nutmeg
  • 3 tbsp butter

Directions:

  1. Peel carrots; cut into sticks.
  2. Pour the orange juice into a 4 cup microwave safe dish.
  3. Heat 1 minute at high .
  4. Add the carrots and the orange rind.
  5. Stir to coat the carrots with the orange juice.
  6. Cover and microwave 8 to 9 minutes at high.
  7. Stir again, then add the remianing ingredients.
  8. Microwave, uncovered 2 minutes at high.
  9. Stir then check for doneness.
  10. If necessary, cook another 1 minute at High.
