Ingredients:

  • 2 fl oz madeira wine
  • 27 fl oz beef stock
  • 1/2 oz butter

Directions:

  1. Sauté the onions in a hot pan until they are well browned.
  2. Add the Madeira.
  3. Reduce the liquid by half, add the stock and then reduce by half again.
  4. Season.
  5. Pass through a sieve, then add the butter.
  6. Serve warm.
