Directions:

  1. Preheat oven to 350°F Grease a shallow baking pan; set aside.
  2. Dice the carrots, onions, mushrooms and red peppers.
  3. In a large bowl, combine turkey, carrot, onion, mushroom, bell pepper, tomato sauce, soy sauce, bread crumbs, egg substitute, garlic powder, salt and pepper; mix well.
  4. Shape turkey mixture into a loaf in prepared pan. Bake, uncovered, for 1 to 1 1/2 hours or until cooked through and starting to brown. Let stand several minutes before slicing.
