Lisa's Spinach and Strawberry Salad and Lemon Dressing

Ingredients:

  • 1/3 cup sugar
  • 1 tbsp olive oil

Directions:

  1. Dressing: Zest lemon to measure 1/2 tsp. Juice lemon for at least 2 TBS of juice. Combine zest, juice, vinegar, sugar, oil, and poppy seeds in a small bowl. Whisk until well blended. Cover; refrigerate until ready to use. Salad: Mix together
  2. /4 cup sliced almonds, toasted
  3. Oz (1 1/2 cups) strawberries, hulled and quartered
  4. /2 medium cucumber, sliced and cut in half
  5. /4 cup red onion, sliced
  6. Oz fresh baby spinach
