Lime Mint Jelly

Ingredients:

  • 4 cups sugar
  • 1-3/4 cups water
  • 3/4 cup lime juice
  • 3 to 4 drops green food coloring, optional
  • 1 pouch (3 oz) liquid fruit pectin

Directions:

  1. In a large saucepan, combine the sugar, water and lime juice; add food coloring if desired. Bring to a rolling boil over high heat, stirring constantly. Add the pectin, mint and lime peel and return to a full rolling boil. Boil for 1 minute, stirring constantly.
  2. Remove from the heat; strain through a fine-mesh strainer into a large bowl. Skim off foam if necessary. Carefully ladle into hot sterilized jars, leaving 1/4-in. headspace. Adjust caps. Process for 10 minutes in a boiling-water bath. Yield: 5 half-pints.
