Lime Cottage Cheese Salad

Ingredients:

  • 1 tbsp chopped pimento
  • green food coloring
  • 1 envelope knox gelatin
  • 1 tbsp lime juice
  • 3 1/2 cup very hot water
  • 1/2 cup vinegar

Directions:

  1. Gradually add gelatin, salt, and green food coloring to hot water, stirring constantly until fully dissolved.
  2. Add vinegar and lime juice. Chill until slightly thickened.
  3. Fold in cottage cheese, pimento, & onion to gelatin mixture.
  4. Pour into individual molds or a shallow pan. Chill until firm.
