Ingredients:

Directions:

  1. Preheat the oven to 350°F.
  2. In a medium bowl, stir together the butter and sugar until creamy. Add flour and salt and stir until well combined and crumbly.
  3. Press into the bottom of an 8” x 8” pan that has been sprayed with nonstick spray.
  4. Bake for 8-10 minutes, until just barely golden around the edges.
  5. In the same bowl (no need to wash it), stir together the sugar, flour, baking powder and salt. Add egg, egg white, lime zest, juice and food colouring and stir until well blended and smooth.
  6. Pour over the base.
  7. Return to the oven for 25–30 minutes, until slightly golden on top and bubbly around the edges.
  8. Cool completely in the pan.
  9. Sprinkle with icing sugar before cutting into bars.
