Light and Tasty London Broil

Ingredients:

Directions:

  1. Score meat.
  2. Do this by making shallow cuts 1 inch apart into the steak diagonally to make a diamond pattern.
  3. Do on both sides.
  4. Put meat in a large plastic bag.
  5. Mix vinegar or lemon juice, oil, garlic salt, pepper, and 3 tablespoons water.
  6. Pour over meat in bag.
  7. Seal and toss to coak the steak.
  8. Marinate on counter for one hour or in refrigerator for up to 24 hours, turning the bag occasionally.
  9. Remove meat from bag and reserve marinade.
  10. In a covered pan cook potatoes and leeks in about 1 cup of boiling water for 10 minutes or until almost tender.
  11. Drain well and halve leeks legnthwise.
  12. Set aside.
  13. Spray a broiler pan with nonstick cooking spray.
  14. Place meat, potatoes (cut side up), and bell pepper on the pan.
  15. Brush all lightly with reserved marinade.
  16. Broil 3 inches from heat for about 6-8 minutes.
  17. Turn meat and peppers, add leeks.
  18. Broil meat to desired doneness (5-6 minutes for rare, 7-8 minutes for medium-rare).
  19. Turn veggies occasionally.
  20. To serve, slice meat thinly across the grain and serve with grilled vegetables and cherry tomatoes.
