Lentil Soup With Barley

Ingredients:

Directions:

  1. Heat oil over medium heat in large saucepan.
  2. Saute together onion, celery, carrot, marjoram, thyme, pepper and salt until onions are soft.
  3. This will take about 5 minutes.
  4. Then add water, stock, barley and lentils and bring to boil.
  5. Reduce heat and simmer, covered, until lentils and barley are tender.
  6. This will take about 40 minutes.
  7. Stir in parsley prior to serving.
  8. Top each serving of soup with a spoonful of yogurt.
  9. Finally, sprinkle a dash of chopped parsley and ENJOY!!
