Lemon Meringue Pie

Ingredients:

  • pie
  • mix in a double boiler top
  • 1/4 cup cornstarch
  • 3 tsp flour
  • 1/4 tsp salt
  • 1 cup sugar
  • add
  • cook and stir constantly over direct heat until the mixture boils.
  • add
  • 2 tsp butter
  • 1 tsp lemon zest
  • cook, and stir until thick; cool.
  • crust
  • put in a bowl
  • 4 egg whites ; beat with electric mixer until in soft peaks when you lift out the beat er.
  • beat in gradually
  • 1/2 cup sugar
  • 2 tsp lemon juice or 1/2 tsp vanilla

Directions:

  1. Preheat oven to 425 degrees.
  2. Pie:
  3. Follow the package directions for preparing the pie crust.
  4. Cool.
  5. Pile filling into the crust.
  6. Spoon and spread the meringue in a pattern evenly over the pie. Spread well to the edge so that the meringue will not shrink as it bakes.
  7. Bake at 425 degree until golden brown (about 5 minutes).
