Lemon Meringue Pie

Mom's lemon pie.
Ingredients:
pie
mix in a double boiler top
1/4 c cornstarch
3 t flour
1/4 t salt
1 c sugar
add
2 c boiling water
cook and stir constantly over direct heat until the mixture boils.
set over hot water, cover, and cook 20 minutes
add
2 t butter
1 t lemon zest
6 t lemon juice
3 egg yolks, slightly beaten
cook, and stir until thick; cool.

1 - 9 pet ritz deep-dish pie crust
meringue
put in a bowl
4 egg whites; beat with electric mixer until in soft peaks when you lift out the beater.
beat in gradually
1/2 c sugar
2 t lemon juice or 1/2 t vanilla
few grains salt
Directions:
1. Preheat oven to 425 degrees.
2. Pie:
3. Follow the package directions for preparing the pie crust.
4. Cool.
5. Pile filling into the crust.
6. Spoon and spread the meringue in a pattern evenly over the pie. Spread well to the edge so that the meringue will not shrink as it bakes.
7. Bake at 425 degree until golden brown (about 5 minutes).
