Ingredients:

Directions:

  1. Beat egg until frothy.
  2. Beat in remaining ingredients except blueberries, beating just until smooth. Gently stir in blueberries.
  3. Grease a heated griddle.
  4. For each pancake, pour about 3 tablespoons of batter from a large spoon or from pitcher onto the hot griddle.
  5. Cook pancakes until puffed and dry around edges. Turn and cook other side until golden brown.
  6. One serving = 2 pancakes.
