Lemon Blueberry Pancakes

they remind me of lemon blueberry muffins! so sweet and SO yummy!
Ingredients:
1 egg
1 cup flour
3/4 cup nonfat milk
1 tablespoon sugar
2 tablespoons applesauce (unflavored)
1 tablespoon baking powder
1/2 teaspoon salt
2 teaspoons lemon peel (finely grated)
1 teaspoon lemon juice
1/2 cup blueberries (fresh or frozen)
Directions:
1. Beat egg until frothy.
2. beat in remaining ingredients except blueberries, beating just until smooth. Gently stir in blueberries.
3. Grease a heated griddle.
4. For each pancake, pour about 3 tablespoons of batter from a large spoon or from pitcher onto the hot griddle.
5. Cook pancakes until puffed and dry around edges. Turn and cook other side until golden brown.
6. one serving = 2 pancakes.
