Ingredients:

  • 4 eggs
  • 3/4 cup oil
  • 3 tbsp water
  • 1 tblsp lemon zest
  • 1/3 cup lemon juice
  • 3 tblsp oil

Directions:

  1. Mix all of the above and beat 2-3 minutes
  2. Fill small muffin pans half full
  3. -
  4. Bake at 350 deg.F for approx. 12 minute
  5. -
  6. GLAZE
  7. -
  8. Combine all of the ingredients and dip top of muffins into glaze and set aside
